Description

The Folkestone Beds consist of seams of pebbles and sand. It is from here that the stone known as chert is found, familiar in the High Chart hills around Limpsfield, Surrey. In Surrey the Sandgate Beds and Bargate Beds, which lie on top of the Hythe Beds, have yielded a distinctive yellow stone seen in many local buildings. Ironstone, from layers embedded in the Sandgate Beds, is often seen in chips ( gallets) pressed into the mortar between such stones. To the east, especially around Maidstone, Kent, the Hythe Beds yield a blue-grey sandstone with a high lime content. Known as ragstone, this is seen in many local buildings.

On the nose is the distinct character of apple blossom with the contribution of the cask reminiscent of hot buttered toast. The spirit is smooth on the palate with an initial sweetness giving and warmth of the spirit which gives way to the characteristic apple flavour which lingers in the mouth. The vanilla and caramel spiciness of the cask marries beutifully with the apple aroma and leaves the memory of warm apple crumble. NCA Profile:120 Wealden Greensand (NE465)". Natural England. Archived from the original on 1 October 2019 . Retrieved 18 May 2020. Will’s approach to using surplus produce or byproducts directs the spirits he brings to market. “We work with local farmers to mitigate their waste and so make a lot of fruit spirits like our Apple Brandy and Raspberry Ghost”, he says, “even our Wealden Rum is made from a locally sourced byproduct.”Greensand Ridge Distillery, based in the picturesque Weald of Kent, launched five years ago and was built from the ground up with sustainability at the forefront. The distillery has been lauded for the efforts it has made thus far the reduce its environmental impact. But for founder and self-proclaimed environmentalist Will Edge, this approach was the obvious choice, having “started with a clean slate”. Situated deep in the English countryside, the distillery is housed in an old victorian coach house, the perfect setting for a private party. You’ll operate your own individual copper pot still. The six mini stills mean that small group sizes up to 12 make it a really intimate atmosphere. On the nose is a delicate raspberry aroma, more akin to an autumn raspberry on a misty morning then a bright summer berry. The first taste is much like a super premium smooth and creamy vodka, but as you swirl the spirit in your mouth the raspberry flavour bursts onto the palate and endures long into the finish. So yes, they use advanced technology and 100% renewable energy, but they also work with their region’s farmers to reduce food waste at the farm gate by fermenting and distilling quality produce that supermarkets won’t take. If you think you know Rum, or it's not been your spirit, ours is one to try. We're not trying to copy existing rum styles, and ours is certainly no sugared and aggressively spiced rum. Expect something ridiculously smooth, with a sweet character and no harshness. It's a complex spirit with a sophistication characteristic of all our releases. At that point I’d been making alcoholic drinks for about 15 years. First it was those awful lager kits you could buy in Boots, but that eventually led to full mash brews including my all-time favourite, Brett fermented Flemish red ales. I served my craft cider at my wedding in 2009 and, over the years, have had various infusions and macerations secreted about my home. The Masters in Brewing and Distilling at Heriot-Watt accelerated the move from passionate hobbyist to full-time career. As we work with quality surplus produce, the varieties that we press each year varies depending on what will go to waste, meaning that the spirit will take on a mildly different character from year to year. There is a whole spectrum. There are spirit brands who are amongst the most sustainable distilleries in the whole country but are just quietly getting on with it. Then there are well-known consumer brands who are talking about sustainability a lot but really don’t have any impact on the carbon footprint of their distillery,” he says.

Much of the ridge in Surrey and Kent is followed by a long-distance walking route, the Greensand Way. Extending for 108 miles, it starts in the west at Haslemere and ends in the east at Ham Street, Kent, on the edge of Romney Marsh. The route passes through or close to Godalming, Cranleigh, Dorking, Reigate, South Nutfield, Oxted, Westerham, Sevenoaks, Maidstone and Ashford. About 51 per cent of the Wealden Greensand is protected as the South Downs National Park, Kent Downs Area of Outstanding Natural Beauty and Surrey Hills Area of Outstanding Natural Beauty. [2] Geology and soils [ edit ] A geological cross-section, from north to south, through the Wealden dome in Kent and Sussex Geological history [ edit ] Drunk neat the Raspberry flavour can be quite elusive at first; the spirit really comes alive with the addition of some sweetness and sharpness. So drinking as a long drink with tonic (try Fever Tree Mediterranian Tonic) really enhances the spirit. Garnish with a slice of lemon and fresh mint. Over the course of two and a half hours, you will learn all there is to know about gin distillation. On arrival, you’ll relax with a tea or coffee while you hear about the history of distilling and the role of botanicals, you’ll then select your own botanicals with assistance from our head distiller, and then enjoy a complimentary Gin and Tonic while you distil your bottle. Many people are familiar with Calvados, the French apple spirit made with Normandy cider apples. Our spirit is made with dessert varieties so it is much lighter on the palate but wonderfully perfumed and aromatic. Two years of ageing in bourbon casks develops the apple character, adds softness and contributes flavour to the spirit.

THE GIN TO MY TONIC THOUGHTS

Fuller's earth, which lies interbedded between the Bargate and Sandgate Layers, was much quarried for the cloth industry. The seam, which lies about 20 to 30 feet below the surface between Nutfield and Bletchingley, was considered the best in the country and for several centuries large quantities were excavated. Resources are now running low and little is now extracted. [10] Settlements [ edit ] Will Edge: I always said a desk job was a 10-year thing for me. I enjoyed those jobs but I always wanted to be on my feet making things. I got to that 10-year milestone and thought I had better make good on my promises. Will Edge grew up in the Weald of Kent before, like many classmates from Sevenoaks, starting a white-collar career living and working in London.
