STEP ONE Heat the olive oil in a saucepan. Add the onion, carrot, courgette and celery and sauté for about 4 minutes or until softened. STEP FIVE Allow the sauce to cool down a little, then blend and stir in the mascarpone and chopped basil leaves and season to taste.

And to give it even more flavour some mascarpone can be stirred in it.STEP THREE Add the chopped tomatoes, herbs, sundried tomato paste and brown sugar. Bring to the boil, cover and simmer for about 10 minutes.
