I have made homemade curry roux with just the S&B Japanese curry powder in the past, and it works great.

One of the great things about Japanese curry is how adaptable it is. Here are some ways you can adapt it to suit your tastes. Medium-sized carrot: You can replace 1 carrot with 1 potato if you wish. The sauce is so scrumptious, you can use any vegetable really. Just be careful if adding veggies such as mushrooms as these will release water and dilute your sauce. (You'll need to cook down for longer or add less water.) Also, remember that different veggies have different cooking times: if you add peas, for example, these go in towards the end of cooking and not with the carrots, which take longer to soften. Turn the heat off, break S&B Golden Curry Mix into pieces and add them to the saucepan. Stir until the sauce is completely melted. INGREDIENTS Heat 1 tbsp of oil in a large saucepan, fry the onion and carrot over a medium heat until softened. Add the water, bring to the boil, reduce the heat and simmer for 10 mins. Remove from the heat then add the curry sauce mix, in pieces, stir until completely melted. Simmer gently for another 5 mins, stirring constantly. In Japan curry is served with Japanese short-grain rice and this is my go-to. It's often sold as Sushi rice in Western countries and is available at most grocery stores.
