Spring in a glass: grassy, lemon, green apple, hops, and freshly cut flowers. A bit sweeter after a while with apple juice, limoncello and malt sugars, but also some coriander, fresh laundry and kiwi's appear.

A wonderful bottling of 12 year old Aultmore. This Speyside single malt whisky was bottled for Diageo's Flora & Fauna series in 1991. Finish: Medium finish. Slightly waxy. Still sweet. Citrus is a little more pronounced here. Some vanilla and cookiedough. I have to say I was thrilled to see this bottled at a respectable 46% ABV, not chill-filtered and left at its natural colour. These may seem like little, inconsequential details, but those little details provide a very favourable first impression to this enthusiast. Palate (undiluted): slightly sharp arrival, medium-bodied and creamy, with more pear and green grape notes, there's a hint of cereal (barley) sweetness, but it's subdued and doesn't dominate. Finish: Medium length. Slightly drying. Pears and green apples fade, heather and citrus linger. Pepper and spices. Vanilla and woody notes to theforefront.Nose (undiluted): this is a classic Speyside, light and floral with some green fruit notes (pears, green apples, green grapes), there's a touch of light, floral vanilla, but it's balanced by a clean (albeit brief) citrus note. Lemon and lime. It's not a bruiser like Laphroaig or Octomore, but it's very well-balanced. It was rarely enjoyed on its own. It ranks as high or better than 9 of the 12 bottles we tried that evening and it’s hard to ask for more out of an entry level whisky. Malt, banana, dried fruit, vanilla and a light bit of tartness and waxy citrus peel. There’s a buttery undertone to it that adds a nice bit of dimension to overall aroma. Grassy hay, malt, dried fruit and light notes of chocolate, banana bread and tartness with an undertone of citric acid and honey. In 2015, John Dewar & Sons launched the “Last Great Malts” collection in an effort to be more competitive in the growing single malt market. Among the line-up were three Aultmore releases – a 12 year old, a 21 year old travel retail exclusive, and a 25 year old limited release. An 18 year old was introduced at a laterdate.
