Keep in mind that each form contains varying concentrations of anise, so it’s important to modify your recipe depending on what form you’re using. Pastis is often compared with its historical predecessor, absinthe, yet the two are quite different. Where bottled strength is concerned, traditional absinthes were bottled at 45–74% ABV, while pastis is typically bottled at 40–50% ABV. Finally, whereas traditional absinthe is invariably a dry spirit, pastis may be bottled with sugar. How Is Ouzo Made?

Some of the manufacturers use the seeds of star anise rather than real anise seed. They do that because it is less expensive. Perhaps it came as no surprise to me to find that, like many herbs, anise has been a mainstay in humanity’s medicine chest for thousands of years. Scientifically referred to as pimpinella anisum or anisum vulgare, anise is not to be confused with the more pungent star anise ( illicium verum), which is grown in China from a mid-sized evergreen tree and is also known to have strong antiviral and antibacterial properties.
