We’re talking citrus peel, dried fig, sweet sherry and a subtle smoked almond note that begs to be sipped fireside (though we’re not waiting that long, and neither should you).I know I should like this. And I would like to say that I send only goodwill toward the sisterhood. But it’s like when I’m in barre class: Some women are really just not my type. This isn’t terrible, but it’s definitely not my favorite. I wanted to give it a 2, my co-taster said 3, so I’ll split the difference. Nose: Full of fruit. Apricots, lemon (especially the zest) and prunes (a.k.a. the rebranded “dried plums). It closes with mild hard cheese and…is that printer ink? Yes. Yes, it is. Single pot still Irish whiskey: Unique to Ireland, Irish pot still whiskeys feature a minimum of 30% malted and 30% unmalted barley. Rich and bold, they're better suited to veteran whiskey drinkers than beginners.

Bushmills is the world’s oldest licensed whiskey distillery, and its Causeway Collection is all about showcasing rare and unique cask finishes. Matured for 25 years in first-fill American oak rum casks, it's full of funkier tropical fruit notes (think: dried coconut and mango followed by sweet vanilla and warming spice.) It’s bottled at a cask strength of 46.2% and non-chill filtered for a memorable dram deserving of a spot on every epicure’s hit list. Sherry is notoriously divisive, but if you’re a fan of its nutty flavour profile, then you need to get to know this Irish whiskey. Don’t be fooled by its milder aroma; on the palate, there’s dried apricot, nutmeg, allspice and a hint of oak, leading to a rich, rounded mouthfeel.Barrel ageing imparts a touch of caramel or butterscotch into the flavour, as well as woody notes, so seek out aged whiskeys if you particularly enjoy those qualities. To earn its stripes, Irish whiskey must be produced in Ireland and aged in wood for a minimum of three years. Bourbon barrels are commonly used, but to get to grips with this diverse dram, we suggest trying those aged in sherry, rum and double-charred casks too. Appearance: Yellowish, brassy and bright, like the highlights your over-enthusiastic hair stylist talked you into but which don’t really suit your face. That Boutique-y Whisky Company bottles exclusive single malts, grains and bourbons from renowned distilleries, and this release (with a limited run of just 420 bottles) is no exception. The liquid inside is as distinctive as the bottle branding, delivering bags of vanilla butterscotch, citrus, dried fruit and cinnamon. Despite the higher ABV, it’s deliciously smooth; so much so, we’d swerve the ice entirely and savour as is.
