Brian Edwards, "Salted Caramel—that ubiquitous flavour which is actually only as old as Star Wars", Daily Mirror,Feb 25, 2015

AKA, “plain M&M’s.” This is the milk chocolate original that started it all, boasting that it would “melt in your mouth, not in your hand.” I would ask if anyone actually consumed M&M’s in this strange way–by holding them in your mouth and letting them melt, rather than just biting down–if I didn’t have vivid memories of myself as a child, doing exactly that. So I suppose there are likely other freaks like myself out there. M&M’s Minis are meant to be nothing more than the classic plain M&M, shrunk down to an even smaller size … a slightly pointless endeavor, given that the candies are already bite sized. But who cares–the M&M Mini is obviously fun for kids, and the little tubes they classically come in make them even more portable than other M&M bags. Personally, I always associate the Minis with the McDonald’s McFlurry, which used them rather than the full-sized candies. A variety of candies, desserts, toppings, and confections are made with caramel: brittles, nougats, pralines, flan, crème brûlée, crème caramel, and caramel apples. Ice creams sometimes are flavored with or contain swirls of caramel. [3] Etymology [ edit ] You don't need to run to your favorite coffee shop! Light whipping cream (30% milk fat), or double cream (48% milk fat) may be substituted. Do not use milk. Room-temperature cream is best.

Caramel ( / ˈ k ær ə m ɛ l/ or / ˈ k ɑːr m əl/ [1] [2]) is an orange-brown confectionery product made by heating a range of sugars. It can be used as a flavoring in puddings and desserts, as a filling in bonbons or candy bars, or as a topping for ice cream and custard.

The process of caramelization consists of heating sugar slowly to around 170°C (340°F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic colour and flavour. In recent years, though, it’s become far less simple to immediately picture what someone means when they say “M&M’s,” because the sheer variety of flavors available for the candies has exploded. There have been so many seasonal releases and one-offs, kooky promotions and marketing stunts, that it’s hard to even say how many M&M flavors actually exist!

The first ones were created with plain chocolate in New Jersey in 1941 by Bruce Murrie and Forrest Mars – hence the M&M. They were both sons of confectionary company owners, one at Mars and one at Hershey. The Mars family still retains control of this billion-dollar private company that makes these sweets. Peanut M&M’s followed in 1954, but the kaleidoscope of colours was not introduced until the 1990s. Caramel sauce is made by mixing caramelized sugar with cream. Depending on the intended application, additional ingredients such as butter, fruit purees, liquors, or vanilla can be used. Caramel sauce is used in a range of desserts, especially as a topping for ice cream. When it is used for crème caramel or flan, it is known as clear caramel and only contains caramelized sugar and water. Butterscotch sauce is made with brown sugar, butter, and cream. Traditionally, butterscotch is a hard candy more in line with a toffee.

American candy doesn't get much bigger than M&M's! Invented in 1941, today M&M's, the iconic melt in your mouth not in your hand sweets are America's top selling candy. But how well do you know M&M's? Have some fun with our M&M's trivia quiz in our blog - Are M&M's the best American Candy?. These ones, more than most, come down on some level to a matter of taste. Overall, I am probably more of a dark chocolate than milk chocolate fan–I love chocolate in general, and it’s rarely bold or intense enough for me. With that said, I’m not sure I would turn to these Dark Chocolate M&M’s quite as often as the Milk Chocolate M&M originals. After the butter has melted and combined with the caramelized sugar, stir constantly as you very slowly pour in the heavy cream. Since the heavy cream is colder than the hot caramel, the mixture will rapidly bubble when added. After all the heavy cream has been added, stop stirring and allow to boil for 1 minute. It will rise in the pan as it boils. If you’d like to be precise and use a candy thermometer, the temperature will rise to about 220°F (104°C).
