Breakfast is often thought of as the most important meal of the day, so why not add some extra protein, vitamins and minerals to yours with some of these dried fruit and nut mixes? They are perfect for adding to porridge, making overnight oats or adding to your cereal. The beauty of this cake is that you can use whatever dried fruit you have, add nuts and cherries - anything you like or have. The only thing you have to remember is to keep the total weight to 400g (14oz). Secret Ingredient To make this recipe in 2 1lb loaf tins, increase the cooking temperature by 10°C. Halve the cooking time and keep testing until it's done. There is a huge range of dried fruits available at Holland & Barrett and these are just some of our favourites:

If you don't have any jam, you could use marmalade or honey - or even golden syrup (but not too much or the cake will be very sweet). I keep it in the fridge, which isn't essential, but it does keep the cake moist. How to make it gluten-free In fact, nuts can actually be very beneficial to a vegan diet. Because these bars are made from dried fruit and nuts they are more nutritious than biscuits, chocolate or sweets. They are also high in fibre and the fats are usually from nuts, which contain healthier unsaturated fats, unlike the saturated fats found in chocolate, cakes and biscuits. These are often based on dates with other dried fruit and nut additions and, in some cases, flavourings. The fruit is pureed so it can be formed into a bar, which means the fruit sugars they contain will count as free sugars, even if there is no added sugar. Free sugarsare the kind we should all be cutting down on. Whatever you use, make sure you stir the fruit in by hand. It only takes a minute but then you won't chop it up. Is this a moist cake? There are lots of different fruit and nut mixes available and something for everyone to choose from, no matter which fruits or nuts are your favourites.

Thanks to Vanessa, one of my readers: I’ve made this several times using gluten-free flour, I just add a teaspoon of baking powder and twice as much milk, as I find gluten-free flour tends to absorb more moisture. How do you make a vegan Fruit Cake?We have received many lovely messages of support and condolences from friends and customers of Ándi from all over Ireland. As an example of all those message we would like to give one example, as we feel it is apt and representative of many of these reactions to the untimely passing of our dear son, brother, (close) friend and colleague, Ándi Wilson: You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have: Shop a wide range of mixed dried fruit and nut mixes, including Mixed Nuts & Raisins, mixed berries and Trail Mixat Holland & Barrett. Foods rich in protein can be more filling to eat than foods high in carbohydrateor fat, which might be helpful if you are trying to lose weight, but ‘high protein’ does not necessarily mean it is healthier. My special ingredient in this Everyday Fruit Cake is a spoonful of jam - any flavour. I started putting jam in when I was given a couple of jars that had been slightly overcooked. The jam was too stiff and treacly tasting to use as it was, so I added it to a fruit cake and liked it.

May I offer my condolences to you and all of his 'family'. He touched so many people and his work will live on through the orchards he has fathered around Ireland and further afield. (...)
