In 1895, the Grant Family would go into partnership (50%) with Pattison, Elder and Co, forming the Glenfarclas-Glenlivet Distillery Company. Glenfarclas used the funds provided by the new arrangement to rebuild the distillery. Ok technical stuff: Aged for a little over 6 months in new American charred oak, bottled at 40% abv, with the cask resulting in 200 500ml bottles. Then whiskies from distilleries that I never thought I'd ever get to see or try, such as Wasmund's Single Malt.

I have been drinking a great deal of sherry casked whiskies lately. I've yet to try the 30. I have a bottle of the GF21 in my climate controlled safe that I have not opened yet. I tasted it recently at a bar and really enjoyed it. This whisky, one that had me so eager to try as it comes from one of my favorite Speyside distilleries was Glenfarclas 30 year old. As Ralfy notes in review 606 – Glenfarclas 12 yo, direct firing requires more attention and care by the Stillman, so the stills don’t over heat and burn. Burnt stills result in charred wash/low-wines, the stills must then be shut down and scraped clean. Steam coils cause less mess and less damage to the still, meaning less cleaning and a longer life. However, the method of heating the stills does impact the character of the spirit – direct firing tends to provide a fuller, richer, meatier spirit. There's wisps of smoke to the nose, hints of green apple and as the whisky opens up, candied oranges.John Grant and his son George ran Glenfarclas until John’s death in 1889. Sadly, George died only a year later in 1890, and his oldest sons John and George took over. The George/John pattern of inheritance will continue for the next 120+ years. An Antiquated Distillery Direct firing does mean, however, that the stills degrade faster, as charring and cleaning strip the copper. Therefore, Glenfarclas is forced to change over its stills more frequently (every 20-30 years) than other distilleries might. You are responsible for all activities through your account. Financial Freedom The oak makes it's presence known immediately, but it's not over the top. A little bitter, but not unpleasantly so, but it's also sweet and salty. Very odd, but entertaining.

Sweet fruit of sultanas, raisins, figs, and lots of spice, cinnamon, nutmeg, allspice, and vanilla. Oak makes it's presence known as is to be expected of a whisky of this age.

Lovely little nose that takes some time to open up, I wound up nosing the whisky for roughly an hour or so before taking my first sip. This continuity has allowed Glenfarclas to still reflect an older way of making whisky, but this willingness to retain tradition is not down to a romantic belief in the past. Glenfarclas is nothing if not a successful business. Taste: Viscous and silky with good body. Polish, fresh light golden tobacco and a wee touch of salinity. Spice comes to the foreground with pepper and nutmeg. The body is still very fruity and sherried with orange peels, dried red currants, plums and more than a hint of chocolate covered fruit cake.Power and general purpose water comes from various mountain streams (it still is), but the water for mashing comes from “‘Sauchie’ … the most noted and valued spring in the immediate district”. One of Glenfarclas' distinguishing features is its affinity for sherry casks. The distillery predominantly uses Oloroso sherry casks sourced from Jerez, Spain, to mature its whiskies. This choice imparts a unique sweetness and a medley of dried fruit flavours. Creating a signature profile that whisky enthusiasts recognise and adore.
