About this deal

a b c d e "Modifications to the General Declaration on the Protection of the Appellation of Origin "Mezcal" published in the Official Journal of the Federation on 28 November 1994 (MX082)". During the second distillation of this double copper pot distilled mezcal, pumpkin stems, in addition to local seasonal fruits and grains, are suspended inside the still in a basket. This locally harvested produce often includes pineapples, plantains and oranges, along with pumpkin seeds and chepiche , an aromatic Mexican herb commonly used for seasoning. The chepiche rounds out the vegetal flavors from the pumpkin stems and plantains, and creates a perfumed smoky aroma laced with orange blossoms and marzipan. The earthy flavor is rich with citrus peel and herbal notes, with a touch of eucalyptus in the finish.

Its NYC headquarters also doubles as an art gallery where it hosts a curated quarterly series supporting independent artists. One show, Ilegal Pride, donated a portion of proceeds to LGBTQ youth charities. It’s crafted by hand and hoof.In 2017, Ilegal Mezcal entered into a partnership with Bacardi, the parent company of Patron Tequila, although the deal’s specifics were not disclosed.

While fermented drinks from agave (like pulque) is pre-colonial, [10] the distillation of agave heart juice into mezcal was only introduced in the colonial era. How stills reached New Spain remains a point of scholarly dispute; some historians attribute the propagation of distillation to the Spanish who learned the process during the Moorish rule of Iberia, while others trace its origins to Filipino sailors who, after the opening of the galleon trade in the 1570s, brought stills with them to make vino de coco (coconut liquor). Within Mexico, mezcal is regulated under Norma Oficial Mexicana (NOM) regulations, originally NOM-070-SCFI-1994 (in 1994), by the industry body Consejo Mexicano Regulador de la Calidad del Mezcal A.C. (COMERCAM, the Mexican Regulatory Council for Mezcal Quality). This regulation became law in 2003, and certification began in 2005. [15] The origin of mezcal is tied to the introduction of distillation technology which was introduced to New Spain either by the Spanish or Filipino sailors. Ilegal Mezcal is produced in Oaxaca, Mexico. The brand launched out of a Guatemala bar, Café No Sé, as the pet project of an American expat, John Rexer. It is currently headquartered in NYC.
