Soya drinks were one of the first milk alternatives available and remain a really popular choice as they goes well with most things due to their delicate, creamy flavour. Innocent is not just about fruit smoothies, the brand offers a range of vegan milks including hazelnut.

But the other big environmental advantage is that oats can be easily grown in temperate climates so are not associated with deforestation or loss of biodiversity. My chocolate avocado mousse uses hazelnut ‘milk’, mainly because I love the richness and slightly nutty overtones it brings to the party. Specifically, I use Innocent Hazelnut‘milk’ because it contains no added sugar, is naturally cholesterol and lactose free and is also possibly the creamiest plant-based brand out there. I loved rice drink as a child and still do now. The rice imparts a surprisingly delicious and sweet rounded flavour. I like to drink it cold straight from the glass, but it also works well in smoothies and baking because of its relatively subtle flavour. It doesn’t work so well in coffee. Rude Health are the only company making a rice drink with wholegrain brown rice. As a wholefood chef I believe in the benefits of a wholefood diet including added flavour. Hemp seed milk contains naturally occurring omega-3 and omega-6, which are essential for health. Vegans and those following a plant-based diet must take care to get enough of these in their diets, particularly omega-3, so hemp seed milk could be a useful source.If you haven’t seen Oatly’s advertising by now then it might be time for an eye test. The Swedish dairy-free giant is everywhere, from bus stops to billboards and gigantic wall murals. It’s popular too, and for good reason. Oatly’s drinks provide a healthy, well-balanced alternative to cow’s milk and use only a handful of natural ingredients. Like all plant milks, aside from coconut, it contains a lot less saturated fat than cow’s milk – over five times less. It wasn’t assessed by Poore and Nemecek's study, but hemp is regarded as a sustainable crop. According to a report by the European Commission on sustainable industrial crops, hemp requires little intervention to grow, is weed resistant and has very little need for pesticides or chemical treatment, as well as needing little water.

But if You are looking for something a little more traditional, there are plenty of other mousse recipes and ‘moussey’ puddings out there to drool over… You could try these for starters : Good Hemp Seed is the only one of the milk alternatives that we looked at that is not fortified with calcium, vitamin B12 or Vitamin D. An old formulation did used to fortify but Good Hemp has made the decision to make its product more natural. Coconut milk can’t be directly compared here as Poore and Nemecek didn’t assess it in their study. However, coconut milk would likely do pretty well on some measures as coconut trees require very little water and don’t take up much land. Yes and no! It’s definitely healthier. But there’s quite a lot of chocolate in it, so choose wisely when deciding which dark chocolate to use. Some brands have a lot more sugar than others and equally a lot less cocoa solids. Whilst you can make the mousse with whatever chocolate you like, aim for somewhere in the region of 65% to 80% cocoa solids to get a better ‘health’ balance. But be aware that the chocolate you choose, its ‘darkness’ and the level of bitterness will all affect the end flavour. It’s therefore crucial that you taste the mousse before spooning into glasses and if you feel its not sweet enough, add a little natural maple syrup to taste. We didn’t need it, but I know that at GFHQ we don’t like anything too sweet.

Nutritionally, soya milk has historically been the closest to dairy milk, as soyabeans are a complete protein and contain all the essential amino acids. Pea milk is now a similar alternative. It is incredibly rich in vitamins and minerals (most notably vitamin K, folate, vitamin E, potassium, magnesium and some of the B vitamins) and is a fantastic source of fibre, antioxidants and healthy monounsaturated fats. Dark Chocolate The soya milk brands mentioned above source their soybeans entirely from the USA, Canada or Europe, so are not linked to any deforestation in Brazil. If you find a different brand, perhaps abroad, it’s worth doing your research into the origins of the soybeans. It's pretty similar to almond milk. It's low calorie and low fat and low in saturated fat but it's very low in protein.
