About this deal

The Dream to Dram expression is made exclusively with barley harvested from a farm near Kingsbarns in East Fife. After distillation, 90% of the spirit is matured in first fill ex-bourbon casks while 10% is matured in first-fill ex-Portuguese wine and shaved, toasted and re-charred (STR) casks. The Service has been prepared by us solely for information purposes to Members and the Service is based on information we consider reliable and we obtain the contents of the Service from a number of different third party sources (including Contributions), but we do not endorse, support, represent, warrant or guarantee the completeness, truthfulness, accuracy, or reliability of the Services and any information therein. Despite a government grant and two years of crowdfunding, the project fell a little short of the amount required and progress stalled. Fortunately though, all was not lost. Clement’s venture had captured the imagination of the brother and sister team of William and Isabella Wemyss and in 2013, they took over the development of the distillery and before too long, spirit was running from a set of newly installed Pot Stills. A long, slow production process in copper pot stills is at the heart of distillation: a 3 – 5 day fermentation period, wash stills that run for 8 hours and a slow running spirit still with high cut points. That will never change and the stills will never run any faster.

MoM: Can you just tell me a little about the Wemyss Malts range. Did you buy in whiskies or new-make spirit? This bottling, aptly named Dream to Dram, is from some of the earliest casks filled at Kingsbarns. The whisky has been matured in 1st fill ex-Bourbon American Oak casks, and shaved, toasted and re-charred barriques (STR casks). Unchillfiltered and natural colour. MoM: There’s quite a lot of distilleries that have opened, do you think there’s a chance that there may be too many at some point? Kingsbarns’ Dream to Dram is a single malt composed of whisky aged for at least three years in 90% first-fill ex-bourbon casks from Heaven Hill and 10% STR (shave, toast, rechar) Portuguese ex-red wine casks. According to Peter, the ex-bourbon casks currently used by Kingsbarns are all from Heaven Hill. Using STR made me ask whether Dr. Jim Swan consulted for them. Peter confirmed it.

I’ve lost interest in Compass Box ever since their prices started hiking while the quality of their limited editions started dipping. The natural elements on Kingsbarns Distillery’s doorstep, combined with superior wood choice and long, slow fermentation give Dream to Dram its remarkably complex and distinctive Lowland character: light, intensely fruity, floral and balanced, with colour and richness coming from the wood. On the nose there is banana, pineapple syrup and summer berries, with a slight herbal note. There is soft toffee, custard pastry and redcurrants on the palate, with a finish of ginger syrup. Full of sweet, fruity character, DOOCOT is light, intensely fruity, floral and complemented by a rich colour coming from the high quality bourbon casks it has matured in. C omprising of the same liquid as our first release Dream to Dram, but undisturbed for a longer oak maturation allowing complexity to develop while maintaining balance, we hope you find the core Kingsbarns spirit still remains firmly within. Named to mark the Wemyss Family’s vision to bring malt whisky distilling to their Fife home, the new release is a truly local dram, having been slowly crafted with barley harvested exclusively from the golden fields of East Fife.

There can be few new distilleries as beautiful as Kingsbarns. It’s set in rolling Fife farmland and housed in a converted 18th century farmstead, complete with a dovecote that looks like a wee castle. The Wemyss (pronounced Weems) family is old Scottish nobility with its seat at a proper castle nearby called, naturally, Wemyss Castle. This part of Scotland attracts visitors from all over the world to the home of golf, St Andrews Links. As William Wemyss put it, “We’re bringing together golf and Scotland’s other great export.” He means whisky, not shortbread.The floral and fruity notes really take the centre stage even as they are very gentle. With a few minutes of careful nosing, you might detect some vanilla and slight oakiness, but this is rather subtle and could be missed. I’m usually willing to try new things at the right price. Wemyss was put on my radar thanks to my friend, Johnssen Li, who started importing in very small quantities a few years ago. He let me try samples of their different expressions. Their Hive Batch Strength Batch 1 was love at first taste. As a result, when he started importing Kingsbarns single malt, I was intrigued. For those who don’t know, Kingsbarns is a single malt distillery started and owned by the Wemyss family in the lowlands of Scotland. Everything is geared up to produce a fruity, pure spirit, from the unpeated local barley to the two types of yeast used (for all the whisky geeks out there, they are Anchor and Safwhisky M1). Fermentation takes between three and five days and, according to Peter Holroyd, the distillery manager, the two yeasts produce lots of “fruit esters”. When it comes to distillation, he takes a very narrow cut from the 4,500 litre spirit still to ensure a light, clean spirit with no heavy elements. We aren't ones to rest on our laurels here at Kingsbarns and so we will move forward - learning, adapting and striving for harmonic whisky tones wherever we turn. Dream to Dram was the start, and Doocot is far from the finish.
