Most of the genuine outrage I see is geared towards the PC Steam releases which have more concerning issues than console versions. As for the console versions MGS1 and 2 seem to be the only ones with some issues currently (sound and some visual effects) that can easily remedied in a patch. This not an excuse, but a mere correction to stamp out the exaggerated claims. MGS3 however, I haven't noticed any glaring issues on the same level. Some speedrunners claim this is the best modern re-release of the game.
