During our Sri Lankan cooking class at the luxurious Max Wadiya villa in Sri Lanka, we tried our hands at making idyappam, string hoppers, using a traditional wooden press. Both idiyappam and puttu were steamed and appam was cooked in a clay pot with a curved bottom over a wood burning stove. String Hoppers are also a very popular breakfast dish in some Indian states (Kerala, Tamil Nadu, and Karnataka), Malaysia, Singapore, and Indonesia. In India, it’s known by many names such as Idiyappam, Noolputtu, Noolappam, Chomai, Semige, Sevai, Santhagai, and Ottu Shavige. The process of making string hoppers is fairly easy with the right equipment. At a minimum, a noodle press called sev sancha, idiyappam press or idiyappam maker is needed. It is basically a press with tiny holes to make very thin noodles.
