Garlic: Fresh cloves of garlic combined with a few other spices, really complement the horseradish tone in this recipe. Scotch bonnet or habanero chiles: Hot scotch bonnet peppers and habanero peppers are closely related therefore either can be used. If you want to be authentic to the Caribbean, then go with the scotch bonnet. This sauce has several variation changing from kitchen to kitchen and home to home. However our version is simple with limited ingredients to let the peppers shine. Variations include added culantro (Shado Beni, Chandon Beni), ginger, or rum however we really prefer the “simple is best” approach in this particular sauce. Errol Walton Barrow was the first Prime Minister of Barbados from 1961-76 and again from 1986 until his death in 1987. In addition to a serving in the RAF in WWII as a Navigation Officer and being an accomplished barrister Errol Barrow was also an accomplished cook, who co-wrote “ Privilege: Cooking in the Caribbean” with his good friend from Trinidad Dr. Kendal Lee, a Chinese dentist. He noted: “Pepper sauce recipes can be adjusted to suit individual tastes: green papaya, green mango may also be used.” While speaking to people in Barbados, there seemed to be as many people who agree on cooking this sauce as there were people who said to leave it raw. I left it raw as I find that cooking takes away some of the heat of the sauce and since I used fresh turmeric, I wanted to maintain most of it’s health benefits. I must mention that the use of turmeric in not necessarily traditional to Bajan pepper sauce, but since I’m not a huge fan of mustard, I went this route ( we found Bajan pepper sauces to have strong mustard undertones). If you prefer to cook this hot sauce, bring it to a boil and immediately reduce it to a gentle simmer for 5-10 minutes.

While there are many variations of the sauce throughout the world, it is mainly made in the eastern part of the island of Barbados, which is called the Bajan Coast. Bajan pepper sauce is a combination of raw local peppers, vinegar, onion and other spices. Vinegar: I like the touch that white wine vinegar adds to this recipe, but regular white vinegar, rice vinegar or apple cider vinegar can be used instead. Mustard powder: Ground mustard really adds something special to this recipe and is also a very traditional ingredient. I do not recommend swapping it out for anything else.
