About this deal

These in-house creations include a Passionfruit Royal Gin Fizz or Strawberry Royal Gin Fizz which actually contains egg white, and can even be topped up with Prosecco instead of soda for the ultimate drink- but be warned, it’s not for the faint hearted. Aside from a good G&T, The Plough like to experiment with gin - a favourite being a Gin Fizz which compromises of lemon Juice, sugar shaken and topped with soda and a slice of Lime, but often like to play around with them and make different flavoured variants. I've had the privilege of knowing Bartholomew Broadbent and Gregg Perkins for many years (writes Danny), and we started chatting about making our gin available in the US market four or five years ago. Broadbent Selections is so much more than just a brilliant importer, and its been really enjoyable meeting (at least via zoom for the moment) their infectiously enthusiastic team recently.

Danny’s decades in the booze trade means that he understands not only the importance of putting provenance in a product, but of connecting with drinkers on a face-to-face, tangible level. As a result, Dyfi Distillery is open to curious visitors throughout the year, and also shares quite candidly on its social media channels. I've seen some recipes which suggest an addition of orange bitters. This can lift the drink, but also takes it much closer to the Negroni (unless you use Cynar rather than Campari for your Negronis), and part of the charm of Gin & It is in its directness. If you like the drink longer, try 1 part gin to 2 parts each of tonic and soda / fizzy mineral water. At a ration of 1 part gin to 4 parts mixer, its still half the dilution of a single pub measure to a small bottle of tonic! And play around with the ratio of tonic to soda to find the blend which suits your taste best.

Dyfi’s Pollination gin, which uses 20 locally-foraged botanicals, won the best UK gin at the Great British Food Awards in 2017 – and became the first gin to retain the title in 2018. They've kept the momentum going winning three medals at the 2020 World Gin Awards - 'Best Welsh Dry Gin' with its Dyfi Original, while Pollination Gin scooped a gold medal and Hibernation Gin was awarded a silver.

Dyfi Distillery produces artisan gins crafted with wild Welsh botanicals foraged in the UNESCO Dyfi Biosphere on the southern edge of the Snowdonia National Park.. Based in a UNESCO World Biosphere Reserve, the Dyfi Distillery is focused on producing Welsh gin of both the highest possible quality, and ones which genuinely reflect this place. Tradition is combined with innovation, which creates demand for these hand-crafted gins from around the world. Our Inspiration Pete takes charge of the distilling process. “It’s a healthy diversion for a head bubbling over with science,” his brother explains. To get the process started, he suspends the botanicals in a bought-in British wheat spirit overnight. The gin is made in two stills, with an accelerated heating process the following morning ensuring that the gin is vaporising within 22 minutes. Distilling takes a full day, with 200 bottles worth of liquid being produced across the two stills. Pollination Gin to taste… Charge a shaker with plenty of ice, the gin, sugar syrup, lemon juice and egg white. This needs shaking hard. Really hard. This is easier with full tin shaker (rather than the ones which combine a tin base with a glass mixing glass). An alternative method is to shake these ingredients 'dry' (without the ice) first, then add ice towards the end of the shake to chill the drink. Gin was the obvious route, because both of us are interested in producing something that tastes of where it comes from,” says Danny. “We’ve got this amazing botanical diversity here. It’s a forager’s paradise.”

Pollination gin is produced in small batches at our Welsh gin distillery using the highest London Dry standards. Our foraged botanicals come from within the Biosphere reserve: from the Snowdonia foothills, through the Dyfi Forest, and down to the estuary marshlands, including wild flowers, aromatic leaves, fruits and conifer tips. It is a true Dovey Native Botanical Gin.
