If you like even more strawberry flavor, feel free to include some strawberry simple syrup in your martini. I did struggle to let this cheesecake set properly, because it literally just tasted so good. The mix itself, tastes like strawberry milkshake, and its like a dreamy pink mousse so its hard to resist. It does of course set once in the fridge, but you could try and make a mousse version and I’m sure it’ll still be utterly delicious.Reduce the cream cheese, and add in more double cream and you’ll have a winner! Get two glasses. Now, crumble the shortbread into those. After that, pour in the cream cheese mixture. Top the glass with strawberry slices to garnish. Off to the freezer. Chill the cream cake for at least half an hour. After that, serve and enjoy!

The base of this flavored Baileys is their classic Irish Cream Liquor, which combines whiskey with Irish cream and the flavors of vanilla and chocolate. The result is a deliciously creamy liquor with sweet flavors. The freeze dried strawberries that I use to decorate it, can be found in Waitrose, Sainsbury’s, or Lakeland for example.. but if you can’t find it, don’t worry. It’s not an essential thing to use, it just makes them look pretty! You could easily use red or pink sprinkles for example, or shavings of chocolate! Decorate how you fancy, or just make the fudge and eat it all. Some Mudslides call for heavy cream, whipped cream or vanilla ice cream (and chocolate shavings and chocolate syrup).I did my usual sort of decoration for this, but because it looks quite similar to my no-bake white chocolate & strawberry CheesecakeI didn’t want to add a drizzle of white chocolate or anything. I’m glad I didn’t, as I think the swirls of cream, fresh strawberries, and freeze dried strawberries I had enough impact as it was. I honestly think this cheesecake just looks delicious, and if you’re a fan of Baileys, and strawberries, you will utterly adore the taste as well. I’m always a little nervous when I love a product such as this one because when they put ‘limited edition’ on the bottle, that can either mean its actually going to be around for a few years, or its genuinely limited edition.
