About this deal

Craft Cider Making, by Andrew Lea–a cidermaking book which also references cider apples and their cultivation

The production process of hard cider is similar to that of soft cider, with the addition of yeast to the apple juice. The yeast consumes the natural sugars in the juice and converts them into alcohol, resulting in a beverage with an alcohol content ranging from 4-8%. Hard cider can be made from a variety of apple types, each of which contributes to the flavour and aroma of the final product.Sweet, but bland, juice with little tannin or acidity can result in an insipid, bland, boring cider with little character (this is a common outcome of ciders made from standard ‘table apples’ such as Red Delicious, Fuji, and the like) Prices reflect the alcohol strength and the size of the bottle, and do note that it can be cheaper to buy a box direct from the producer – many cideries only sell direct, in fact. The variations in aroma, flavour and sweetness are vast. Palate cleansing, smooth, sweet, acidic or tart; British ciders offer plenty of scope for exploration. While there are non-alcoholic versions, most ciders are alcohol-controlled through the addition of sugar or extra fruit before a second fermentation. This, in turn, increases the ethanol content of the resulting beverage, allowing you to pump up the ABV depending on the recipe. According to UK law, cider must contain at least 35% apple juice (fresh or from concentrate), however, the Campaign for Real Ale suggests that “real cider” must be at least 90% fresh apple juice. In other countries, the requirements aren’t quite so strict. The table below includes some of the varieties commonly considered to be cider apples. This is by no means a comprehensive list, and there are numerous sources–both in print and online–that I’ll refer you to below which contain additional information. Nevertheless, it’s a useful exercise to examine some varieties and their characteristics.

Calvados: The Spirit of Normandy, by Charles Neal–a comprehensive look at the Calvados tradition in Normandy which includes references to French cider apples. In this article, we’ll delve into the history of cider making and explore the different types of cider available, from sweet and fruity to dry and crisp. We’ll also look at the various techniques and traditions involved in cider making, and how these have evolved over time. Whether you’re a cider enthusiast or simply curious about this tasty beverage, this article has something for everyone. We would recommend that you load up (about ¾ full) the crushed apples into a large coarse straining bag (we sell these) and then place this in the centre of the press. This will mean you only get the juice and you will leave all of the pulp behind. Soft cider is also known as sweet cider. Soft cider is a non-alcoholic version of cider that is made from fresh apple juice. The production process involves pressing fresh apples to extract the juice, which is then bottled and sold. Soft cider is commonly found in supermarkets during the autumn season in the US and is a popular drink for families to enjoy. Britain is one of the world’s leading producers of cider, with fifty-six percent of all the apples grown in the UK used to create it – so it’s no surprise that we also produce the most diverse range of styles. Cider has refreshed the palates of countless Britons for millennia, but if you asked a person in the street how cider is made they would invariably say that it was brewed. It’s not – cider is made by pressing apples and fermenting the juice, more akin to wine than beer.Apples grown high in the Welsh mountains, meanwhile, produce a tangy, delicious drink. There can be little doubt that this is a market that has moved on significantly from the sweet cider boom of a few years ago, when the most talked-about tipples were Kopparberg and Rattler. Nowadays ciders are being flavoured or blended with anything from citrus fruits to kiwis or berries, so whether you’re intrigued to try something new or have a penchant for a sweeter alcoholic treat, you’ll definitely be able to find something to satisfy. There’s also no denying that they’re refreshing, easy to drink, and can add a summery vibe to even the rainiest barbecue.
