Not being huge fans of wine pairings and a bit scared by this one’s price tag, we initially opted for a bottle. At the last minute we changed our minds, figuring, “Hey, we’re eating at the best restaurant in the world. Let’s do it!”

The LED components are now made from copper which eliminates the traditional problem of rust within the bulb holder. Perhaps disappointingly, this is not an actual beetle. Instead, it’s a beetle shape painstakingly modelled from fruit leather (made from dried jam) served in an entomology box. The fruit leather beetles have also proved controversial: a former Noma intern has said she spent a three-month unpaid internship assembling the beetles (instead of doing any actual cooking) and was forbidden from talking or laughing as she worked. Mallard wing We couldn’t help but notice a certain element of genius born of necessity in dishes like the deliciously odd (or was it oddly delicious?) bear dumpling. Noma isn’t located in an agricultural hotbed like Italy, France or even Thailand. Its Nordic locale forces chefs like Redzepi to use the limitations of the region to stretch culinary creativity in new and exciting ways. Noma’s “Mushroom Broth with Sumac” may be the most innovative course we’ve ever eaten. Did we mention that we started our evening by hopping on a bus to travel across town to Noma? Considering the restaurant’s ginormous price tag and multinational clientele, we were likely the only diners that night who were that ‘in touch with the city’ and our wallets. Founded in 2004 when Claus Meyer tapped René Redzepi to join his food revolution (the restaurant’s name is literally short in Danish for Nordic Food), Noma originally sourced all of its product from the Nordic region. The restaurant upped its approach after relocating to its current space in 2018 and now exclusively sources its product from the Copenhagen region. But, in some ways, Noma is an anomaly with food that takes its cues from molecular gastronomy as much as from ecology. We have immense appreciation and understanding for what Noma offers and appreciate the fact that more than a few people won’t understand it.

For 20 years, René Redzepi has reigned over both the world’s best and most caricatured restaurant. But not for much longer. Redzepi has announced that the Copenhagen restaurant will close for regular service at the end of next year. It will re-open in 2025 as a test kitchen and e-commerce business. Unfortunately the delivery company will be unable to remove items from the pallet or take the pallet away with them. They will normally place the pallet where required but within reason of the physical constraints of the pallet size. The driver will normally wait for you to inspect the goods and we would recommend you do so before signing the delivery note. This beautiful NOMA Acrylic Light String Reindeeris a magical Christmas piece that is sure to get you in the festive spirit. Sitting down with a delicate string of lights caught in his antlers and a friendly smile on his face. Reaching 54cm in height with an acrylic material used to ensure that it will stand the test of time and look stylish during the day as well as at night. The free-standing figure is beautifully illuminated with 48 white LEDs throughout the main part of the body and an additional 8, one in each of the string lights. He reaches 54cm in height so you can use this as part of an outdoor display or inside.

How many restaurants would have the temerity to serve bear dumplings? A pure sphere of juicy fried bear that Mindi proclaimed to be the best hushpuppy ever, each bear dumpling arrived with an ivory spoon drizzled with bear caramel. Once again, I was disappointed by the desserts, which have been the weakest link in all the seasons. Hopefully, this will improve next year, as I think it simply hasn’t been the main focus of the test kitchen. The chocolate-covered reindeer moss is just a revival of an old Noma classic, but fits well with the seasonal theme, of course. His dedication to truly local ingredients – no lemons, no olive oil, no nutmeg or cinnamon in the northern climes of Denmark, so no place for them on the menu – shaped a whole generation of chefs who care about where their food comes from. It’s also responsible for the menu trope “all food is sourced locally where possible” and usually means that Kenyan green beans and Peruvian asparagus will feature.

An abbreviation of the Danish words “nordisk” (Nordic) and “mad” (food), Noma opened in central Copenhagen in 2003 before shutting down in 2016. The restaurant, by choice, seats fewer than 100 diners each day. Tens of thousands of people attempt to pry one of Noma’s precious few tables the moment that each dining ‘season’ opens for reservations. It’s that competitive. If you do nothing, you will be auto-enrolled in our premium digital monthly subscription plan and retain complete access for 65 € per month. Words, pictures and even the restaurant’s enormous pedigree can’t convey the enormity of the experience we shared.

Measuring an impressive 190cm in height, this stately reindeer stands as a magnificent centrepiece, commanding attention and spreading joy to all who behold it, making it perfect for any festive display. Additionally, the convenient assembly process allows the reindeer to be effortlessly pieced together in 4 parts, ensuring a hassle-free setup experience. Small items may not require a date to be booked in, a courier may arrive whenever they have the availability to deliver, they may ask you for delivery instructions if you are not in on the date of attempted delivery. Next up are sweetbreads of reindeer wrapped in reindeer moss – a bushy lichen that serves as pasture for reindeer in Scandinavia. The soft and fatty sweetbread goes well with the crunchiness of the moss, and we are instructed to dip this in the leftovers of the egg yolk sauce (thank goodness I saved some).
