Balance: very nice overall balance. Rum sweetness goes well to balance Balvenie citrus. Score: 22/25 I would call The Caribbean offering by Balvenie more or less an "accent bottle." In my cabinet, I tend to keep four scotch bottles open: one sherry cask, one smoky-peaty, one savory, and an accent.

My love affair with whisky began with Balvenie Doublewood. Who knew something given as a wedding favour at a friend’s wedding would set me off on a whisky-obsessed trajectory? Little did I know just how much I would come to appreciate the complexity of Scotch whisky, and more importantly, and arguably lead me to start this blog…Or if you are looking for something a bit more savoury try a creamy brie? Or maybe even a Camembert? Creamy Brie In 1892, work commenced on Balvenie New House, an 18th-century mansion, to transform it into a distillery, and a year later, in May 1983, the first Balvenie single malt was distilled. And thanks to @ WhiskyBee for recommending this. His review recommends substantial breathing time, so I have allowed a small sealed sample breath for a couple weeks:

The Balvenie Doublewood 12 was my introduction to the world of whisky – so it will always hold a special place in my heart. Plus, its versatility makes it an excellent choice for almost any occasion or celebration — ranging from casual drinking nights with friends to intimate dinner parties. The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. Finish: Long but not for my taste. The dry rum cask wins the battle, giving few chances for the sugar canes to impact. Nose: Very fruity, with Speyside flavours dominating. Raisins, plum, banana, green apples, strawberry jam, cream, tiramisu, cinnamon and nutmeg. Time brings out more depth, with barley, honey and sugar cane creeping in.

What next?

He built Balvenie 1892. It shares its water source, the Robbie Dhu springs, with Glenfiddich. It has gone from strength to strength, becoming one of the most prestigious distilleries in the world. William Grant and Sons also own Glenfiddich and Kininvie Distillery. William Grant became famous for being the first person to incorporate wood finishing into the final processing of his single malt. This process involved using ex-bourbon barrels for the first aging, followed by second aging in ex-Rum, Sherry, or Port casks. Now that I'm into my third or fourth glass of this whisky (not in a row), I'm finding it easy to forget about the rum cask finish and to focus on the malt itself. Because for me, this whisky is all about the malt. Evenly spread the shredded coconut on a rimmed baking sheet and toast in the oven until golden brown, stirring halfway through, about 5 to 7 minutes.

I like to keep a light malt around for a varied whisky experience. (Examples could be: Auchentoshan 18 or Select, or Glenfiddich 14/19/21, or Glenmorangie 10.) It suits to initiate the palate before an evening tasting, maybe even cleanse the palate in between heavier drams, and it finds utility during warm summer days. So while this is not my ultimate variety of malt, I compliment it for being very good for its purpose: clean refreshment with mild sweetness, and completely in balance. Rich with sweet notes of ripe mango, pineapple and guava, toffee, Christmas Cake and plump rum soaked raisins. Hints of floral notes and malt intermingling with oak come to mind. Hints of fudge and soft spices. The finish is long and rather subtle, dry but not bitter. Occasionally I notice a hint of something like ginger as it fades. Maintains a solid grip on the mouth. Chewy with tropical fruits, passion fruit and mango come to mind in particular, with a little peach. Sugar cane, molasses then some citrus in a subtle way and it’s also laced with golden honey.

The Balvenie Caribbean Cask and Doublewood are two of the finest whiskies produced by Balvenie. The Caribbean Cask is a 14-year-aged single malt whisky that has been finished in rum casks which have previously held a variety of Caribbean rums. This process imparts a rich, tropical flavor profile to the whisky, with notes of vanilla, coconut, and dried fruit. Meanwhile, the Doublewood is a 12-year-old single malt whisky which has also been aged in both traditional oak barrels and sherry casks. The resulting whiskey is full of flavours of honeyed sweetness, spice, vanilla and oranges. Palate: Sweet and metallic on entry. Ever-so-light buttery toffee, and then the sugarcane sparkles: saccharine but without the sweetness, perhaps like starfruit... or maybe silvery stardust. This whisky is in fairly good balance but it ends up being too flat, especially from the nose. With a finish nicely long, which just doesn’t match my taste. This Balvenie gives a warm feel of Caribbean, but not in the best way. It is like watching After the Sunset. Offers sweet spots like the beautiful scenery or appearings of Salma Hayek in the film – just to be died down by too much dryness, like Pierce Brosnan’s dry behavior on the silver screen. Finish: Not very long, but dynamic. White chocolate, licorice, charcoal, pecan, caramel, vanilla, maraschino cherries, sugar cane, barley, hay, and a touch of salt.
