This recipe was born out of a rather disappointing visit to an Indian restaurant in Budapest. A trip of all things, to get a broken tooth fixed. You can start by keeping just these 5 essential Indian spices that can also be used to make other dishes and not just Indian.

Type of Spice and Use in Cooking – Mainly used as a colouring agent to give the dish a yellow appearance. Pasanda ( Urdu: پسندہ, Hindi: पसन्दा), also called Parche ( Urdu: پارچے, Hindi: पारचे), is a popular dish from the Indian subcontinent, notably North India, Rampur, Hyderabadi and Pakistani, derived from a meal served in the court of the Mughal emperors. The word is a variation on the Hindi-Urdu word "pasande" meaning "favourite", which refers to the prime cuts of meat traditionally used in the dish.

In this text, the dish mentioned talks of the pounding of fine meat until they become thin, before being cooked with yogurt buji. It’s very similar to how Pasanda is made today. One must take the goat or lamb meat from the thigh and flatten it with a wooden mallet. After the meat is cut and flattened, it is marinated with yogurt, chili powder and many other spices and seasonings. If you have kids for the meal, watch the green chilies you add to your coriander chutney. If you do not have coriander chutney, make a paste of handful coriander leaves, very little ginger and cumin. Taste test so there is not too much ginger. This gravy is rich and heavy than other Paneer Dishes so it makes a great side for occasions like weekend dinners, parties or festive meals like Diwali. Serve the rice and peas with the lamb steaks and pasanda sauce. Garnish with the remaining coriander.

The list of spices may look long but they are all common spices you will use in a variety of recipes. garam masala- you can make your own garam masala, but I buy mine from the grocery store (it's super cheap!). Garam masala adds a bit of cinnamon/cardamom yumminess to this Indian spice mix.
