Using an airtight container for storage ensures the freshness and flavor of the syrup is retained for up to a month. Now let’s consider coconut nectar. Coconut nectar doesn’t have an overbearing flavour. It’s simply quite sweet, a bit like caramel. This means it can be used quite easily when you want the focus to be delicious sweetness, or when you want to carry another flavour such as a particular fruit. Gram for gram, maple syrup has considerably more calories than coconut nectar. However, it also isn’t hugely complicated in terms of processing, meaning that like coconut nectar and unlike processed honey, it retains a high-degree of its original nutrients. Maple syrup contains antioxidants, calcium, magnesium, zinc, iron, potassium, manganese and copper.

Percent Daily Values are based on a 2,000 calorie diet. Your daily values may be higher or lower depending on your calorie needs. With bees farmed for honey, honey is not vegan-friendly. That immediately eliminates it from a large and growing number of people’s diets. Honey also has a very distinctive taste, and isn’t just ‘sweet’. Substitute extracts. Got your own little extract library in your baking cupboard? Try substituting coconut extract or rum extract for the vanilla. Well, I bet you will get a whole new reaction from the family when you tell them: “Pancakes with coconut syrup!” or “Waffles with coconut syrup!”

For many of us, we care about the provenance of our food and want to make choices that don’t unduly damage the environment or global communities.

Keep in mind that different brands of coconut extract may vary in strength of flavor. For Flavorganics, I use 2-3 teaspoons (about 1 tablespoon) of extract per cup each of water and sugar. For other brands, you might be able to use less. As it is a homemade syrup, it may not last as long as store bought versions which often contain preservatives. I recommend using a good coconut milk brand for extra flavor. Don’t worry if the contents have separated into coconut cream and coconut water – as the mixture heats, it will dissolve. Now, add a can of coconut milk to the mixture. This not only infuses the syrup with a rich coconut flavor but also lends it a slightly different flavor profile that pairs excellently with a variety of dishes. Step 4: Reaching the Desired ConsistencyYou can substitute this crystal clear syrup in any recipe calling for basic simple syrup. It mixes well with pretty much any spirit, but especially rum, tequila, and vodka. Ingredients you’ll need Add a little more coconut flavor– You can always add a little coconut extract if you want to really bring out that coconut flavor. I’ve been making my own simple syrups for some time now and really love how easy they are to make. I use them often for my morning coconut matcha latte and in my coconut iced coffee.
