First of all, you need to decide on your dry dose, that is, how many grams of ground coffee you’re going to put into your portafilter’s basket. Then you need to synchronise a further two factors: the coarseness of your grind and the time it takes to pull your shot. Answering the first question was easy (one or two), but the cappuccino calories question is a tad more hazy. This is because the amount of milk baristas add to cappuccinos varies a bit. And milk, as you know, is the part that brings calories to a cappuccino. Well, most of them – the espresso contains a few. Grind your coffee into your portafilter and reweigh it, ensuring you have the desired dose in your basket (here you may need to discard or add some coffee) But let’s take some ballpark figures. On average, a regular cappuccino contains 80 calories. Why? It’s because semi-skimmed milk has 50 calories per 100ml, and cappuccinos contain about 150ml of milk. So (*grabs a calculator*) you’ve got 75 calories overall. The espresso contains just three little calories, giving you a grand total of 80.

There are many different tips for ensuring even coffee distribution – and you’ll find that many of them are controversial. However, a gentle tap pre-tamp (never post-tamp!) is generally recommended. Before we begin, I want to share one crucial piece of advice with you. No matter your technique, recipe, or equipment, the key thing you should focus on is consistency. Make sure that you do things exactly the same way every single time – unless you’re experimenting with variables, of course. Most specialty cafes will be running one or more ‘on demand’ grinders. This is generally because doing so is a good step towards achieving espresso consistency. You can set them to grind a certain amount of coffee at a fixed grind size in a set number of seconds. Paolo Scimone is the owner of His Majesty Specialty Coffee Roasters, which is located in Monza, Italy. He says that in the Italian tradition, a ristretto is a shot of coffee made by adding 7-8 grams of ground coffee to water and extracting 15 grams of coffee out, in a ratio of 1:2. An obvious and reliable way to eliminate or minimise the impact of unpredictable factors when making coffee is weighing espresso shots. This process usually involves adding steps into your workflow, which usually go something like this:

So how do you know what grind size is right? First, try to reach the recommended extraction time (25–30 seconds) and then try to find the best-tasting and best-extracted shot within that (whether you judge it by taste or by TDS). Do this by adjusting the burrs. Remember to taste every single extraction and take notes. Anson recommends going for a low acidity coffee, such as a naturally processed one from Brazil, Sumatra, or Nicaragua, and that coffees suited to ristrettos are “typically coffees grown at lower altitudes”. Paulo concurs, explaining that “soft beans with medium-low acidity better suit this kind of extraction because a juicy and acidic coffee can be too sour in a ristretto.” Was anything in Martin Reynolds’s evidence to the Covid inquiry surprising today? We already knew that Boris Johnson had a sketchy hold of the details when Covid emerged in early 2020, something that the PM’s former private secretary gave us more on when he admitted that there was a period of ten days where the Paolo says that because the ristretto is seen as similar to a regular Italian espresso, some coffee shops call a double shot of espresso a ristretto. However, the two drinks have several important differences. There’s no room for racism in Britain, we’re told. EDI (equality, diversion and inclusion) initiatives and anti-racism strategies are everywhere. We’re all familiar with the ‘horror’ of micro-aggressions and unconscious bias. We are forever on alert for dangerous racial ‘dog whistles’. And yet the last few weeks has exposed a troubling blind spot when it

So, once you’ve distributed your coffee as evenly as possible, it’s time for the magic moment itself: tamping. Try to do it in one clean, sharp move. And in this case, make sure to change just one thing at a time. By keeping everything else consistent, you can be confident that this variable really is the cause of any differences in your espresso flavor, TDS, or customer satisfaction. Other coffee shops offer the ristretto as a stand-alone offering and also use it as a base for espresso-based drinks like lattes and cappuccinos, where its sweetness and richness enhances the drink. Most human beans can cope just fine with 400 milligrams of caffeine a day. This is the same as about two-and-a-half cups of filter coffee, four mugs of instant or… six cappuccinos. Just remember that it’s not just about the caffeine. Because cappuccinos include milk, they also contain calories. Which needs us nicely on to… There is one scrummy shot of espresso in a cappuccino. They contain espresso coffee, steamed milk and creamy froth in equal amounts. This means you get the same amount of coffee (and caffeine) whether you are sipping a cappuccino or taking on a single espresso shot. Now you know how many shots in a cappuccino (plus some other stuff), why not find out how to create café-standard coffee at home? But that’s too much for now. Let’s keep it simple: The coarser the ground coffee is, the faster the extraction will be. The finer the ground coffee is, the slower it will be. But how much actual coffee does our foam-topped friend contain? We’re asking the question you want to know: how many shots in a cappuccino?

Hmmm, nah, that’s not quite how it works. More milk might take the strength of coffee taste down a notch, but it doesn’t alter the caffeine content. Ground coffee sits in the portafilter: the first step in espresso-making. Credit: Ivan Petrich Select the right grind sizeSam, a Melbourne based coffee trainer, explains that a ristretto is a restricted shot as its extraction is stopped before the coffee’s full acidity is released. This shorter extraction time means that it’s less complex and contains less caffeine. In addition, the soluble compounds creating fruity and sweet flavours will be released, with extraction stopping before any bitter, caramel, and chocolate flavours extract. How long was the extraction? What weight is the yield? If your shot was too short, the espresso will be under extracted. This often results in salty or sour-tasting espresso. The longer the shot and the more water you’re pushing through your espresso, the more you’re extracting from your coffee. But be careful – it’s very easy to over shoot, and this will give you over-extracted espresso. This often tastes bitter, won’t have much flavour, and will have no lasting finish. So you want to find the golden middle: the sweet spot where the extraction is optimum. Since slinking off into ignominious retirement two years ago, Westminster has been blessedly free of the pronouncements of Len McCluskey. Amid ongoing questions about a controversial hotel project, the former Unite boss has seemed largely content to reinvent himself as a scribe of sorts, teaming up with longtime comrade Jeremy Corbyn to release, er, a

This is the barista’s greatest challenge and can make or break a café’s reputation – quality control and consistency. While a ristretto is a prepared coffee beverage, the term is often used by major brands to describe coffee shots with an intense flavour. For example, Nespresso offers a ristretto capsule as part of its espresso collection.Hang up the bunting and grab a suitcase of wine – it’s Covid Inquiry prime time.
