Add the frozen mango, lime juice, tequila, and Cointreau to a high-speed blender, and blend until smooth. Then, add the ice, and blend again until the mixture is smooth and frosty. Taste, and adjust the balance if necessary. Finally, enjoy! Typically, you’d make them yogurt, fruit, and aromatic spices. But this one goes a step further with rum! Yum! It’s still full of botanical gin and zippy citrus. But it’s mellowed by the mango juice beautifully. To make this mango margarita just score and scoop out the flesh of the mango. If you’ve never done this before, you can watch me do it on the video for my White Sangria with Mango and Berries recipe. Glorious Mexican food is happening all week long, and since I just made my Carne Asada last week, I’ll probably whip up my Carne Asada Tacos and Carne Asada Fries this week with any leftovers. But I’ve also got tacos on the brain. So maybe I’ll whip up my Shrimp Tacos, Grilled Fish Tacos, or Pulled Pork Street Tacos. Tough decisions, I know. But whichever taco recipe I choose, they’ll be served up with my best ever guacamole recipe. And rather than coconut rum, you’ll use regular, so it’s not nearly as tropical as the recipe above. I know I said the spicy margarita is my favorite drink on the list. But I think this might have to take the top spot.
