Then, cut here and there with kitchen shears to into 3- to 4-inch lengths, immerse in a pot of boiling water, simmer for 2 to 3 minutes, and drain. Mung bean vermicelli can be softened by soaking them in hot water for about 5 minutes. To rehydrate them even more, you can also add a little bit of oil to the water before soaking. Once the vermicelli has softened, you can drain it and use it in your favorite recipes. Another option is to blanch the vermicelli in boiling water for a few minutes until it is tender. This is a great way to soften the vermicelli and also helps to retain its flavor. Whichever method you choose, make sure that the vermicelli is completely softened before adding it to your recipe.
