We’ll start measuring now; first off, we’ll start measuring 12 cm or 4.72 inches from the top; we’ll measure this distance on two different spots so we can align our tape measure to those spots. Then, using the tape measure, we will mark the three drill holes, which will be vital in the next step. You're probably singing in a living area where you don't want to disturb those who live around you. If you're singing especially loud, as many singers have to, 30db isn't enough to lessen the sound. As we mentioned earlier, you need the right heat, airflow, and moisture balance to make a success of biltong making. The ideal climate is warm (not hot), dry, with steady airflow. The easiest way is to use your glue gun and add some glue to the washers before placing them over the dowel holes. Do this for each dowel hole. 3. Assemble the box 3.1. Put it all together

So you may need to tweak your biltong box setup carefully over time until you have a perfect balance. Biltong should dry to ‘semi-moist’ within 24-48 hours, and should not take longer than a week even if you like it crisp. We can easily do that by using simple washers. The only important thing is that the dowels can fit through the washer’s hole. We will glue a washer to each dowel hole which means we will use 8 washers.This is an option for those who have a large budget for this sort of thing. Remember how I mentioned that getting a soundproof room or practice space will cost you thousands of dollars? This doesn’t need to be very strong, as that also runs the risk of drying the outer layers before the inside of the meat. You just need enough to keep drawing air through the box and pulling the released moisture away. Many recipes call for vinegar in some sort. Sometimes for flavor, sometimes for purposes of preventing mold. I typically don’t use it, but many people associate the vinegar flavor with Biltong. As for the mold prevention: If you place clean meat in the box with a good low rpm fan, then you don’t need vinegar. Flavor Make sure you see the measured and indicated spot from the previous step. Now we’ll take our drill, with the hole saw attached, and align the drill point with the measured spot on the panel.

Let’s now drill the fan hole using our 89 mm or 3.5” hole saw; the size is, of course, chosen by the dimension of your fan. Some (larger) boxes contain a (traditional) lightbulb. The lightbulb is there not to warm things up too much, but it will warm up the surrounding air. Warm air rises, and that creates a natural draught. I’m advocating a fan instead, that way you have zero temp increase, and the moisture is drawn out anyway. If you have a heat source there is a risk that the outside of the meat dries faster than the inside. Biltong Box, Top View As a first step, let’s look at the components that we’ll use. If you live somewhere very chilly, it will take a long time for airflow to draw the water from the meat and finish the curing process. Now you can add the glass door to the cabinet by sliding it into the hinges. Take your flat-head screwdriver to gently secure the glass door with the screws on the inside of the hinges.
