Toast coriander seeds by adding them to a dry sauté pan and stir constantly over medium-high heat until the seeds are aromatic and slightly darkened, about 4 minutes. Cool on a plate. Repeat with the cumin seeds. Fibrous and tough aromatics. Once the chiles are pounded quite fine, add lemongrass, galangal, makrut lime zest, ginger, grachai, etc. Fibrous ingredients should be sliced quite thinly before being added to the mortar; the finer they are to start, the less pounding you’ll have to do. For most people, I recommend going with one of the top 3: Mae Ploy, Namjai or Aroy-D. They came close enough that you can't go wrong with any of them. But if you're vegan or allergic to shrimp, then Aroy-D would be your only good option. Thai Basil– essential for a true green curry experience! Tastes like Italian basil with a slightly more aniseedy flavour

Maesri Green Curry Paste 400g - Maesri | Sing Kee

Because of the volume of veggies and tofu plus the sauciness of the green curry, you'll need a large pot or pan with at least 3-inch tall sides. less spicy - green curry is meant to be a spicy dish, but you can always adjust the level of heat by using less curry paste, and choosing the Thai Kitchen brand over the more traditional Maesri paste. with crispy tofu - for this dish, since the coconut green curry sauce is the star of the show, we really don't mind the tofu being "plain" and basic. And it's nice not having the extra steps of pre-cooking the tofu.I then tasted the two curries with jasmine rice, because Thai curry is always served with rice. And here are the results: tofu - super-firm is the most dense and easiest to cook with in this dish (no pressing), but extra-firm tofu also works (press it first). Having cooked this curry on the stovetop for years and now in the Instant Pot, here are my tips for you: Eggplant - Traditionally small green Thai eggplant is added to this curry although they can be hard to find. So go ahead and use Japanese eggplant, small Italian eggplant, graffiti eggplant, or even Indian baby eggplant. The eggplant simply melts in this curry giving a creamy texture and rich taste

Thai Kitchen: The weakest flavour in the group by a long shot. It is not spicy at all (so kid friendly). In this standardized test the curry sauce was too diluted to even determine how good the flavour was. Serve green curry tofu with freshly cooked rice. We enjoy jasmine rice with this saucy green curry, but brown rice is great if you prefer whole grains. At the basic level, Thai curry paste is simply a mixture of ground herbs and spices - and there are tons of varieties: red, green, yellow, massaman, panang, etc. They're also used in many dishes beyond Thai curries, such as this cauliflower stir fry and Thai fish cakes. With the above guidelines, I arrived at these 5: Most common brands of Thai red curry paste on the market. You can also do an all-veggie green curry without any protein. I recommend hearty vegetables such as Asian mushrooms and Japanese eggplant. Sauteing or roasting the vegetables first so that they are browne will make it more robust-tasting. Aroy-D - another brand that I use quite often cuz it’s widely available; and if Mae Ploy isn't available this is the one I get. They also make my go-to coconut milk.
