Steep-and-release is a new brewing method — only gaining popularity in recent years. These brewers take the form of a pour-over, but use immersion instead of percolation. The coffee is left to steep in water, and then released in one go through the filter. The key here is to get your hands on an espresso grinder that produces a smooth and consistent grind that brings out the most flavour from your coffee beans. Espresso is ground a bit coarser but still finely. The coffee beans' grind size is essential to your espresso's quality. If the grind is too smooth, the water will have difficulty passing through the coffee and extracting all the flavours. The Sage Dose Control Pro grinder has a grind adjustment dial and a smaller hopper containing up to 240g of beans. That being said, I am a drummer, and for many years I didn't wear earplugs when I really should have, and I'm a loud drummer, the guitarists in the bands I've been in have been just as loud, so my hearing isn't the greatest. In these cases, these beans being so hard that the grinder treats them as if they were stones, means that if this failsafe wasn't there, there's a good chance that the grinder would be damaged, possibly irreversibly. Some other entry-level grinders (and some not so entry level grinders) are known for stripping gears for example when they try to grind beans that are too hard for that grinder.
