Made with Goslings Rum and ginger beer, this cocktail is a perfect blend of sweet and spicy flavors. The specific recipe remains a family secret, but we can piece together the broad strokes of how this comes together. Taking a whiff from the glass, the spirit smells pretty much exactly like you’d expect from a good rum. In Bermuda, roofs are important for collecting rain (the only source of drinking water on-island) and diverting it into cisterns for use by homes and businesses.The black rum is poured gently over the ginger beer to create a layered effect that resembles dark clouds looming over the sea. Crushed ice is used to balance out the heavy Gosling's Rum, making for a boozy and delicious cocktail. And the island’s tropical climate helps to accelerate the aging process, as the heat and humidity maximizes the interaction between the rum and the wood. The Goslings recipe remains a carefully guarded secret, but the family says it has changed very little since its creation.

When poured carefully, the rum will float atop the ginger beer, creating an overcast look similar to a stormy sky. The Goslings Black Seal Rum is the star of the show, and it adds a rich, full-bodied flavor to the cocktail. There’s no specificity as to whether the base is from sugar, molasses, or something else… but molasses would be my guess. This decadent sipping rum uses the same recipe as Black Seal, but it’s aged between 16 and 20 years, putting this rich and earthy spirit on par with a fine Scotch or Cognac.
