Description

With all of the meals in this book, you simply pop your ingredients in a tin and let the oven do the work. I think this is a really nice touch for those who may be less confident making their own recipes and also supporting those moments when you don’t know what to cook and you have some odds and ends in the kitchen. From flexitarians to families, enjoy this accessible book for everyone who wants to eat easy veg-based meals to fit around busy lives!

This dish is like sitting in an outdoor café in Spain, and can make the dullest supermarket produce sing. When she's not styling and writing, Rukmini enjoys planning for an extensive organic kitchen garden from the confines of her London balcony, complete with chickens. Her aim is to transform Britain's midweek meals one roasting tin dinner at a time from omnivores to vegans, flexitarians to families or households of one or two. After 20 minutes, stir through the Puy lentils, crème fraîche and another good scatter of sea salt, then top with the feta cheese and breadcrumbs. By simply popping your ingredients into a tin and letting your oven do the work, this cookbook creates simple and easy recipes for everyone to try for themselves. Her new book, India Express, is a collection of easy, quick and flavourful vegan, vegetarian and fish recipes. An easy one-tin take on the classic Catalan dish of escalivada (roasted aubergines, tomatoes and peppers), this vegan-friendly recipe is perfect as a midweek meal or is a great addition to a vegetarian spread. Oh, ik moet mijn best doen om niet te beginnen kwijlen bij de cover (en foto’s binnenin) van dit geweldige boek.

And I find it an excellent way of cooking odds and ends of vegetables, after a successful fridge forage, too. Seventy-five one-tin recipes- half vegan, half vegetarian, all delicious THE SWEET ROASTING TIN, THE LATEST IN THE MILLION-COPY-SELLING ROASTING TIN SERIES, IS OUT NOW **THE SUNDAY TIMES BESTSELLER** The Green Roasting Tin is the ultimate vegetarian and vegan cook book. It’s good for batch cooking for the week ahead, as any leftovers will keep well for a couple of days in the fridge. You can find her recipes, recipe videos, events and newsletter information through the links in the menu.

It does show a little bit of fear I think – because it’s really a vegetarian book which wants to appeal to vegans without turning off any markets. Every single dish in this book has about 20+ ingredients and I don’t understand with so many ingredients how any of these dishes can be quick? b>

With every meal in this book, you simply pop your ingredients in a tin and let the oven do the work.

i can appreciate the pretty food of others in books and on internet, and i understand that visually appealing food sells more cookbooks than ‘real-life’ food made by people like me without fancy cameras, food stylists, a tableware budget, or even adequate lighting.Take the bulgur wheat out of the oven, give it a stir and leave it to steam dry for 5 minutes before stirring through the lemon juice, coriander, parsley, olive oil, salt and black pepper. No one cuisine is focused upon and there are enough great combos in here to keep you going for a few months. Here are ten of our favourites from across the series, each guaranteed to transform midweek cooking from a chore to an absolute breeze. From flexitarians to families, this book is for anyone who wants to eat easy veg-based meals that fit around their busy lives.

I don’t doubt it will be every bit as successful, maybe even more, than Rukmini's first volume, which has earned a place in kitchens up and down the country. The proportions were all off here and I am not sure how you slice a red cabbage into cubes and then separate the leaves and lay evenly in a roasting tray without overlap or mess. This tabbouleh has rather more bulgur wheat than a traditional version (which is mostly a parsley salad), so think of this as a hybrid. Tip the gnocchi into a large bowl, then pour a kettleful of boiling water over it and leave to stand for 2 minutes before draining well.

Roasted spiced beetroot and chickpeas form the base for this dish, while the coconut milk reduces down quickly in a hot oven to make a simple and delicious curry sauce.
