Dough is often seen as one of the more challenging areas of baking, but with the simple instructions and handy tips Rukmini includes in her chapter on dough-based creations, you’ll soon master everything from buns to bread with ease. Decades earlier, her parents began a courtship on the 1,000-mile-long, 24-hour railway journeys between Kolkata on India’s east coast, where her mother lived, and Chennai in the south, her father’s home region. I mostly cook just for me (no family, no dinner parties etc), so mainly interested in main dishes with leftovers as needed. With a topping made from oats, spelt and fresh ginger, this is a lighter, fresher take on this favourite dessert all round. Driven by occassion rather than ingredient (I did miss those infographics, but that's what her other books are for), it is a worthy companion to both The Roasting Tin: Simple One Dish Dinners and The Green Roasting Tin: Vegan and Vegetarian One Dish Dinners (my personal favourite, and the one that has found a home on my bookshelf).

They suit me as everything is pretty basic and straightforward, it’s easy to leave out any particular ingredient if I don’t have it or it’s something one of my kids don’t like, etc.
