About this deal

This side dish was created in Emilia, and it is the perfect complement to a vast variety of roasted meats, such as beef braised in Barolo wine. Ideal as a side dish or appetizer, this variety of onion it is much appreciated for its unique and unmistakable taste. As the name implies, she comes from the town of Boretto, in the province of Reggio Emilia.

Sadly, I’ve never quite been able to recreate the beauty of those remarkable onions, but they set me off on the road of onion discovery. Along the way, I’ve discovered Roscoff, Borettane, Grelots, Walla Walla and the hardy brown Japanese onions, each of which has distinctive flavours and qualities. This is also my food-style, except on special occasions when the menu is more traditional and rich in dishes and, yes, also in sides. It can be prepared in bitter-sweet or boiled; It is also suitable for preservation in oil or vinegar. In addition, it is a food with remarkable nutritional and therapeutic properties, to be consumed also on a diet, albeit with some precautions.
