During the introduction phase, the diet requires you to introduce foods slowly, starting with small amounts and building up gradually. In stages two through six of the introduction phase, other foods—like raw, organic egg yolks, fermented fish, pancakes, homemade bread, and apple puree—are added, assuming you tolerated the previous foods well.The diet’s founder claims that people with GAPS conditions also have low stomach acid production. To remedy this, she suggests followers of the diet take a supplement of betaine HCl with added pepsin before each meal. The GAPS diet includes many anti-inflammatory foods, such as antioxidant-rich vegetables, heart-healthy fats and fish. It also emphasizes fermented foods, which are high in probiotics. Some research has suggested that probiotics could exert an anti-inflammatory effect in the body. Fruit juices, including apple, mango and pineapple added in small quantities to the vegetable juices. You can also use small quantities of raw honey to sweeten any of the juices or the cooked apple and make them more palatable. Avoid citrus fruit at this stage, which can irritate the lining of your gut with its acidity. Stage 1: Consume homemade bone broth, juices from probiotic foods and ginger, and drink mint or chamomile tea with honey between meals. People who are not dairy intolerant may eat unpasteurized, homemade yogurt or kefir. Completing the GAPS Introduction Diet gives you a head start in healing symptoms of leaky gut and its related conditions, but it’s too restrictive to stay on it for an extended period of time. The Introduction Diet should ideally take one to two months, spending one or two weeks each on Stages 1 and 2. After that, spend approximately one week each on stages 3 to 6, moving on to the next stage as soon as you’re able to tolerate all the foods in the current stage. After that, it’s important to implement the full diet, which is much less restrictive but continues to eliminate all sugars from your eating plan. These include grains, all sweeteners except raw honey, and starchy vegetables.

The GAPS theory is that a leaky gut allows chemicals and bacteria from your food and environment to enter your blood when they wouldn’t normally do so. Several studies have shown that increased intestinal permeability may be associated with underlying inflammation. The GAPS diet may not be suitable for everyone. For example, those on a vegetarian or vegan diet may not be able to meet their nutrient needs as the GAPS diet food list is based heavily on animal products. The authors conclude, “the research on modulation of gut permeability is just starting.” While they do mention the potential for certain diets to affect intestinal permeability, there is no mention specifically of the GAPS diet.
