It depends on how long you anticipate aging it for! If something is left to sit for time, let it rest on its side away from direct sunlight, just as you would any fine wine. If you have an open bottle, you can store it at room temperature or in the fridge. Chilling a bottle will extend the lifespan — the cold slows down the oxidation process.

White wines, generally crisp, mineral-driven blends of Arinto, Viosinho, Gouveio, Malvasia Fina and an assortment of other rare but local varieties, are produced in small quantities but worth noting. Tasting Note From Buyer: An intense, deeply flavoured Port, with a massive bouquet suggesting vanilla, oak and honey, and a mouthful of very complex flavours of dried fruits, spices, and nuts. As the wine unfolds smoothly and develops in the mouth, one discovers a superb balance of wood ageing and vibrancy, characteristic of Sandeman Tawny Portos. Otima 10 Port is a little dry, fruity with well balanced wood-ageing flavours. The red fruit tones with delicious raisin tastes and touches of wood-aging are well integrated with its acidity. Not too sweet, it finishes with a fresh, rich aftertaste.A rich yet elegant combination of flavours - dried apricots, honey, nuts, spices, vanilla - creates anendlessly complex wine that unfolds smoothly and develops in the mouth.

White! Rose! Tawny! Vintage! There are different ports for different people. Whites are bright and best served chilled, vintage ports are pricier, but ready to sit in your cellar. Rose ports are a happy medium – easy for sunny days, after dinner drinks, and beyond.Otima 10 Port are aged in the company’s extensive Warre's cellar in Vila Nova de Gaia. Ports aged in the Douro tend to react to the great heat of the summer months by gaining over-strong caramelisedflavours. A small proportion of Douro aged Tawny Ports are normally a valuable addition to the final blend, but in excess, they will unbalance a great aged Tawny Port. Port is a type of fortified wine produced in the Douro region of Portugal,” describes Anthony Caporale, Director of Spirits Education at the Institute of Culinary Education. “The name comes from the city of Porto at the mouth of the Douro River, which was the hub of the port wine trade from the late 1600's. Like other fortified wines, port has a distilled spirit (in this case a neutral grape spirit known as aguardente) added to it to increase the alcohol content and help preserve the wine. The spirit is added during fermentation to stop the process, leaving unfermented sugar in the wine that gives port its notably sweet, rich character. Today we’re taking a belated look at four of the Port wines of Warre’s, one of the major Port houses, including its most widely-known expression, Warrior. We’re also looking at a fresh bottle of the 10 year old Otima Tawny, a wine we’ve reviewed three separate times in the past. These are all nonvintage bottlings, of course.
