If short grain is not available, you could use medium grain rice but other grain such as long grain, and Jasmine rice are not suited for sushi. Sushi Vinegar Originally, “sushi” was a form of preserving fish, introduced to Japan in the 8th century from Southeast Asia; this involved wrapping a piece of gutted fish in fermented rice. This allowed for fish to be stored for several months, but surprisingly, the rice was thrown away. Later, the preserved fish was eaten with rice, Japan’s staple food, and was called nare-zushi, which can still be found today. Tea is usually self-served, though they may provide the first cup for you. At most kaiten-zushi, cups and green tea powder can be found at the table, as well as a faucet for hot water. If you prefer, you can spread a small amount of wasabi onto the sashimi before rolling. Alternatively, dissolve wasabi in the dipping soy auce.

Tokyo is famous for many things, but beaches are not one of them. Outside of the city limits, however, the prefectures of Kanagawa, Chiba, and Shizuoka have thriving beach scenes. It’d be overselling to call these spots world-class – head to Okinawa for that – but if you’re in and around the capital during the summer and crave a little surf, there are many great options. Almost synonymous with Japanese cuisine and one of Japan’s major symbols, sushi is one of the most mind-boggling yet delicious types of food in the world. The idea of eating raw fish may make you cringe at first, but there’s a reason why it is the beloved food of the Japanese people for centuries and why it has taken the world by storm in recent years. Soy sauce – Almost all types of sushi are eaten with soy sauce, save for a select few such as anago. Pour some soy sauce into a tiny round dish and dip your sushi there before eating, rather than pouring it directly on the sushi. I did not include flavoured grilled eel, tuna belly and hikiwari nattō (finely chopped fermented soya beans) which are also in the photo because they are not commonly consumed. But if you are interested, you could buy a frozen version of these at Japanese grocery stores. Hikiwari nattō will need to be mixed with finely chopped shallots (scallions). Most Asian and Japanese grocery stores also sell the Japanese brand short grain rice, e.g. Koshihikari. When the rice is cooked, you need to add sushi vinegar and mix. Sushi vinegar is called sushisu (寿司酢) and can be made from rice wine vinegar and sugar and salt. Please refer to the post Japanese Dressings. You can also buy a bottle of sushi vinegar from the supermarket and Asian grocery stores. Don’t get it mixed up with rice wine vinegar. Sushi vinegar should be sweet. It is better to make a reservation before going; if you don’t speak Japanese, asking someone who does (such as the hotel concierge) may be more helpful. If you can’t get the cooked aburaage pouch, don’t worry. In the next post, I will introduce a recipe for Home-made Inari Sushi which explains how to make seasoned aburaage from scratch. How to make Inari SushiEating at a formal sushi restaurant can cost you as little as 2,000 yen to over 30,000 yen at the most high-end places; usually, prices are in the 5,000 to 15,000 yen range. There are no rules as to what should go inside temakizushi but you must have suitable rice to make sushi rice. The best grain rice for sushi in general is short grain rice. It is often sold as “sushi rice”. You can buy sushi rice at supermarkets or Asian grocery stores. The name of this sushi is associated with a type of shrine called ‘ Inari Shrine’, which used to worship the deity, Inari. It is said that the favourite food of the fox, the messenger of Inari, was aburaage (deep fried thin tofu) so people offered aburaage to the shrine.

When you turn the pouch inside out, you will get quite a different texture and the colour of the aburaage is lighter. The method of making inside out Inarizushi is the same as the traditional one.
