Master Distiller Richard Paterson has been the creative force here for nearly five decades. He hand-selects the casks from the world's finest wineries, bodegas and distilleries and ages the whiskies in them to create something truly remarkable. This 18-year-old Single Malt has been matured in a number of casks previously used to age bourbon whisky and Oloroso sherries. It has aromas of vanilla, dark chocolate, orange and cinnamon and flavours of dark chocolate, candied citrus fruits, coffee and nutmeg. On the palate, it is harsh and peppery. Any wood or smoke disappears almost immediately, and if there is toffee; it is well burn. Sherry cask aging is probably one of the most mentioned attributes in the whiskey vernacular, yet in terms of understanding, sherry tends to be overlooked. It is common knowledge that sherry is a fortified wine produced from Spain. It is becoming more common for people to recognize the names of the main styles of sherry, such as fino, oloroso, and Pedro Ximénez (PX). But what are the requirements for making it? We whiskey nerds love aging processes, so how is it aged? The Dalmore obsesses over the sherry barrels they select, and knowing more about sherry can help you understand why. Thankfully, there are perks to being a spirits writer, when it comes to setting up tastings. In the last few years, I’ve been consistently expanding my knowledge and tasting data of classic Scottish malt distilleries, falling in love along the way with the likes of GlenDronach, Oban, Arran and Glenfarclas. There was one prominent Highland name on my list, however, that I’d never sampled: The Dalmore. Figuring it was time to finally familiarize myself with this particular, sherry-rich lineup, I reached out to the distillery and ultimately ended up with samples of all 7 core Dalmore expressions.

Anyone who hates on Dalmore has not tried it before, as this can go toe to toe with Glendronach and Macallan in my humble opinion. Dalmore Cigar Malt was discontinued in mid-2009, causing quite an uproar indeed. The whiskies used for the reworked version were actually slightly older, but naturally still pair perfectly with a cigar. Palate: Sweet, dry, and rich. Fruity and only very slightly salty. Fresh plum, chocolate syrup, chocolate covered raisins, coffee, tobacco. Very full sherry presence throughout. Continued tobacco segues into the finish. Dry, with a soft bitterness. Wisps of coffee and cream.
