As part of the conservation effort, Pink Pigeon Rum is a contributor to the Mauritian Wildlife Foundation.

It is here, nestled between the azure sea and towering mountains, that Medine Estate has been producing rum since 1926, making it the oldest working distillery on the Island. Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor. We offer 4 rum workshops from €50, discover our many dates. Possibility of privatizing a workshop. Our workshops are mainly in French. What can I say, since arriving in Mauritius I have become a Rum fan. In fact, I've become somewhat of a rum collector! Situated one thousand miles off the southeastern coast of Africa, the remote island of Mauritius was settled by the Dutch in 1507. Much like other European countries at the time, the Dutch used the settlement's tropical climate and indigenous population to cultivate the crops they were unable to harvest on the European continent, including sugar cane and ebony. By the time the Dutch abandoned the colony in 1710, the island of Mauritius had developed extensive sugarcane plantations and relied on the crop as its main export.

Mauritius was home to the Dodo bird and is still home to a number of endangered species such as the Pink Pigeon after which this rum is named. Made as a single estate rum from a molasses base from sugar cane grown in volcanic soil by the Medine Distillery (founded 1926 and oldest operating distillery in the country) and spiced with Madagascar and Reunion Islands BourbonVanilla (which grows as orchids on both islands – and in the case of Reunion grows in heavily volcanic soil), orange zest from Reunion Island, orchid petals (giving it a gentian and white flowers taste) each ingredient is individually macerated in their rum then blended giving them a much more finer grained control over flavor than throwing them all together and hoping. Take one rather moody looking bottle, a hefty dose of vanilla, Britain’s oldest wine and spirit merchant, throw in an incredibly rare bird, then invite one of our most creative mixologists to see where his inspiration takes him. In 1852, Dr Pierre Charles François Harel developed the concept of local distillation of rum in Mauritius, using only the finest local ingredients from his vast Pamplemousses Garden Estate to create a liquor of outstanding quality and pure refinement. Made from some of the finest sugar cane in the world, Pink Pigeon undergoes quadruple distillation with each time a new botanical being added to the mix. The bourbon Vanilla is considered to be the finest vanilla in the world. It grows wild in the rainforests of Reunion and Madagascar before being sundried and matured in the wooden cases for eight months and once fully matured it is infused with Pink Pigeons rum and rested for a further six months. This labour intensive process make the bourbon vanilla one of the most expensive spices in the world. Pink Pigeon rum is produced in Mauritius at the Médine estate, which includes a rum distillery and a sugar factory, both separated by a few metres. The sugar factory supplies the distillery with sugar-rich molasses. In 1991 only about 10 pink pigeons remained in the wild. Due to a very successful species recovery programme the population had risen to nearly 500 individuals in 2014.

Pink pigeons are still dependent upon intensive management for their survival. Management measures still undertaken include supplementary feeding, the provision of nest boxes and the management of introduced predators such as rats.
