Once the barrels of distilled Zacapa are in place at The House Above the Clouds, it's time to start the complex, finely balanced ageing process. Founded in 1876 as a bustling railroad stop, the resident population was soon joined by travellers from around the world, leaving a legacy that can still be seen today in local surnames. I have used the full naming convention on the bottle for the purpose of this review to avoid any confusion.Burgaleta also developed and created the rum Venado, another product of Industrias Licoreras de Guatemala. We use a unique Sistema Solera, based on a Spanish tradition developed over 500 years ago to age sherry.

A particularly decadent rum from Ron Zacapa, long-aged in a Solera system and allowed a finishing period in French oak casks from Le Bois du Roy - the wood comes from four French forests, protected since the 13th century when the King imposed strict restrictions on the harvest. Because it’s aged at such elevation, the aging process itself is a lot gentler —consistent cooler temperatures and lower atmospheric pressure ease the natural molecular exchange between spirit and barrel.Only in this precise spot can Zacapa's exceptionally deep aroma, full colour and rich palate emerge to reach perfection. The packaging also highlights the unique climate of Guatemala, which they also say assists in producing this premium product. Raisins, sultana’s and prunes come through to add to the aged oaky flavours giving a very well-balanced and smooth rum and coke. To celebrate this historic event, Guatemala's premier rum-producing company decided to create something special.

It’s bouquet is very flowery and fruit laden and it’s finish is a good 5 minuets or so but over all it’s a dangerous Rum because it’s very easy to get lost in the complexity and over do it and get really drunk. The Zacapa initially gives a bouquet of brown sugar, it reminds me a little of a chocolate or caramel/toffee sauce for ice cream or desserts.A royal Mayan symbol representing the unity of time and space, earth and sky, each petate band is traditionally hand-woven in villages of the Departments of Chiquimula, El Quiché and El Progreso.
