Preheat your oven to 550 degrees F or 525 degrees F or as high as your oven will go. The key to quality pizza at home is a really hot oven. I always preheat mine for at least 20-30 minutes before I put the pizzas in to bake. Re-cover the bowl, and after 5 minutes do another fold. Wait 5 minutes and repeat; then another 5 minutes, and do a fourth and final fold. Cover the bowl and let the dough rest, undisturbed, for 40 minutes. Then refrigerate it for a minimum of 12 hours, or up to 72 hours. It'll rise slowly as it chills, developing flavor; this long rise will also add flexibility to your schedule.

Spread about ½ to ¾ cup of pizza sauce all the way to the edges of the dough. Not too far ahead though; López-Alt has done some interesting research on this very subject, and concludes that a rise time of between three and five days is optimal: “Eventually, even at cold temperatures, the yeast will start to produce a large amount of those sour milk aromas, throwing off the flavour of your bread. And there’s an even bigger problem: as the alcohol content and acidity of the dough rises, eventually it gets so high that the yeast simply ceases to operate.” Pizza dough: use a ball of store-bought dough for convenience (often found in the deli section at the grocery store), or make your own homemade dough.
