The Dalmore 12 year old is aged in bourbon barrels for the first nine years, after which half of the remaining spirit is aged for an additional three years in sherry butts that previously held Matusalem Oloroso sherry, while the balance continue their aging in previously used bourbon casks. Matusalem is a type of Oloroso sherry that is sweetened by the addition of a little Pedro Ximénez (PX) sherry, which is produced from partially raisinated grapes and is intensely sweet and syrupy. To qualify as a Matusalem, the sherry must be produced from a solera with a blend averaging at least 30 years old. The name is derived from Methuselah, the grandfather of Noah, who, at 969 years of age, was the longest-lived person in the Old Testament. Tasting Notes

The Dalmore 12 Years Sherry Cask Select spent its first decade in regular ex-bourbon casks made from American white oak. Dalmore then collaborated with three well-known cooperages from Andalucia—Tevasa, Vasyma and Paez. A different blend of Pedro Ximénez and Oloroso sherry was created for each of the coopers before seasoning the European and American oak casks. Those casks were used for a finish of up to three years. The Dalmore has a number of notable firsts. It was the first single malt exported from Scotland (to Australia) in 1870. For much of its history it has been ranked among the largest distilleries in Scotland. Its current production capacity of 4.2 million liters of pure alcohol still places it among the top quartile of Scotch whisky distilleries. The Dalmore 12 Year Old stands as a testament to intricate maturation techniques. Initially aged for 9 years in ex-bourbon casks, this single malt whisky then embarks on a distinctive journey. Half of the spirit rests for an additional 3 years in Oloroso sherry butts, while the other half continues to mature in bourbon casks. These two halves are masterfully brought together, resulting in a harmonious symphony of flavours. Unless mandatory applicable law provides otherwise, your use of and membership to the Service are exclusively governed by Dutch law. We shall first try to settle any dispute over a dram of whisky. Disputes that cannot be settled over multiple drams of whisky shall be solely submitted to the court of Amsterdam, The Netherlands unless mandatory applicable law provides otherwise.

Margaret attempted to get involved with the running of the business on several occasions but was often left out of the loop, being asked to sign cheques and never getting a straight answer as to what the money was needed for. When she eventually moved in with her father at Parks of Inshes, she finally began to realise that all was not well with her affairs. Nose: Pretty richly sherried with some clear dry Oloroso notes, but also more sour, aceto balsamico notes that I associate with Pedro Ximènez sherry. Hints of fudge and toffee accompanied by orange zest and rum raisins. Finally some hessian. We’re off to a good start. A fresher sweetness than the Lagavulin 16 that I marginally preferred. It was that of a tropical or pineapple nature, rather than a honey, Demerara, molasses or sugar sweetness, but not as fresh as say, the sweetness of a crisp apple or pear.

If it took me on a steam train journey through the hills and lochs to get me to the pineapple upsidedown cake, which sadly wasn't lightly christened with any cinnamon, nutmeg or dusted chocolate that I so wanted to experience from this, I'd have probably marked it higher than the Lagavulin 16, which I scored an 8.5. That’s pretty much what the press release says. A shorter explanation would be that this Dalmore was finished in ex-Oloroso and ex-Pedro Ximénez sherry casks. That’s a decent interpretation, right? Dalmore 12 Years Sherry Cask Select (43%, OB, 2020) On the nose; Straight away, images of caramelised banana followed by a strong pineapple upside down cake presence.When Dalmore announced their 12-year-old Sherry Cask Select, I figured it was simply a new version of the standard Dalmore 12-year-old. Apparently I was misstaken. Because while they both are part of the distillery’s so-called Principal Collection, this latest release has received a somewhat different treatment from master blender Richard Paterson. It’s quite clean and structured. Some whiskies feel like they’ve gone from cask to bottle with minimum interference but this has the precise feel of the blender about it. Overall though, I found it to be well balanced with reasonably good depth of flavour and fairly pleasant to sip on. Nothing in the Terms shall exclude or limit our liability for fraudulent misrepresentation or for death or personal injury resulting from gross negligence or willful misconduct by us.
