Nice post. But, honestly, those bamboo mats cost almost nothing and they strike me as being very minimalist. They have a stiffness to them and they’re designed for the task at hand. And, in my opinion, wiping stains off a small bamboo mat is easier than getting them off a towel. Bamboo mats are flexible and unlikely to break. However, wooden mats are hard and difficult to roll, making it a struggle to make sushi. While plastic mats may have some flexibility, they can easily become deformed or warped. There are several people in the U.S. that prefer NOT to taste the nori.
